Turkey Caesar Salad

I am working hard to make sure none of our Thanksgiving leftovers go to waste; however, Thanksgiving is such a food heavy holiday, it is difficult to motivate myself to eat the same meal for the week following. As a result, I decided on this quick, easy, and light dinner to put a dent in those leftovers.

What you’ll need:

Leftover turkey bits

Caesar dressing, premade or homemade

Tomatoes, cut into bite sized chunks

Lettuce, chopped into large chunks for salad

Freshly ground pepper

Freshly grated Parmesan

Leftover bread or rolls

Olive oil

Garlic powder

The process: Cut your leftover bread or rolls into crouton size bits, spread evenly on a baking sheet, sprinkle with olive oil and garlic powder. Bake in an oven preheated to 400 for 10-15 minutes.

While the croutons bake, mix your tomatoes, lettuce, and turkey bits. Add a dollop of Caesar dressing and mix to coat. Once the croutons finish baking, add to the salad mix and mix to coat with the dressing. Sprinkle with freshly grated Parmesan and freshly ground pepper.

Results: This is another quick and easy recipe to use after a long day of cooking. I had leftover Caesar dressing in the refrigerator which made this even easier for me. I actually made this the day after Thanksgiving, it was the perfect light meal to follow such a heavy day of eating.
