Iced Sugar Cookies

Time to ice all of those cookies!

What you’ll need:

2 cups powdered sugar

¼ cup milk

¼ cup shortening

1 t. almond extract

Food coloring

The process:

Mix all ingredients in the bowl of a stand mixer. I added a bit more milk to thin the icing. This still allowed the icing to harden nicely. Using a spatula, I scooped a small amount onto each cookie and allowed it to spread across the surface. Using the spatula, I spread an even coat where the icing didn’t spread evening. I allowed icing to dry completely before storing in an airtight container.

Results: 75 cheerleaders cheering thank you! All 12 batches of cookies went quickly at work today, which is good since I didn’t want them sitting around the house. I know most icing that dry hard require raw egg white. I was hesitant to include egg whites into this recipe since the cookies were being served to students and I didn’t want to be responsible for making anyone sick. This icing was a great replacement. It dried hard and had a wonderful flavor. A recipe worth keeping around for next year!
