I love them so much that I have been known to pack just an avocado and spoon for lunch. I even feed my dog an avocado based food!
With that being said, it’s only fair that I make something I can actually share with the other person at my dinner table.
½ shallot, chopped
¼ lemon, juiced
½ cup yogurt (preferably homemade)
2/3 cup asparagus, cut into bite sized peices
Whole wheat pasta
2 small garlic cloves, minced
Salt and pepper to taste
Cook your pasta according to the package directions.
While the pasta cooks, sauté chopped shallot in olive oil over medium heat until just tender. Once shallot begins to tender, add asparagus and garlic, and warm through. Don’t allow the garlic to burn. Remove from burner and set aside.
In the bowl of a food processor, process the avocado, yogurt, lemon, salt and pepper until smooth. Set aside.
Once pasta is finished, drain and toss with avocado sauce and vegetables. Serve immediately.
Results: This was a really refreshing pasta dish. I would be perfect on a cool spring night!
