I need to be honest, I haven’t been preparing much meat the last couple of weeks and I have begun to crave it! I have nothing against eating meat. I just find it cheaper not to plan meals around it, which results in me not buying any. But lately, my body is crying out for some meaty goodness. Maybe it was the mass amounts of snow we received or the colder temperatures, but there is no way to avoid it on this snowy January night.
A quick run to the market and a little refrigerator rummaging resulted in a deep dish pizza creation that is sure to warm up my house tonight!
What you’ll need:
1 whole-wheat pizza dough ball
½ lb. ground chicken
1/3 cup onion, chopped
2 roma tomatoes, chopped
1 garlic clove, minced
3 T. chili sauce
1 cup cheddar cheese
½ cup mozzarella cheese
Optional garnishes- salsa, sour cream, shredded lettuce, black olives, chopped peppers
Begin by preheating your oven to 350 degrees.
While the oven preheats, lightly cover your baking dish with olive oil. Roll your dough out to fit inside your cast iron skillet or pie dish. Lay inside so the dough covers the bottom and walls of the pan. Set aside.
Meanwhile, cook the ground chicken over medium low heat. Once the meat is finished cooking, remove from the pan and drain any grease. Drizzle the pan with olive oil and lightly sauté the onion. Once the chopped onion becomes tender, add the tomato and garlic. Cook for about 1 minute. Return the meat to the pan and mix until all ingredients are blended.
Once all filling ingredients are combined, pour into the dough lined pan. Sprinkle the filling with the chili powder. Bake at 350 for 15 minutes. After 15 minutes, remove the pizza from the oven, sprinkle with all cheese, and bake for an additional 5 minutes. Allow to cool 5 minutes before serving. Serve with the garnishes of your choice.
Results: This was such a quick and easy dinner. It’s filling, spicy, and everything I needed to warm me up on a cold winter night. I hope you enjoy it as much as I have.
