Carrot Soup

As I sit on my couch typing this, I can’t help but stare out the window. It appears as if a giant cloud has crashed into the mountains and now lays beached in the foothills, lingering yards above our roof. It is an unusual sight. Needless to say, it is a cool damp day, which is good since we have been experiencing such a dry winter. But, it has been a slow day as I continue to stare out the window and nurse a lingering cold with lemon ginger tea.

On these damp, cold days I find myself constantly looking for ways to warm up. Tea and toast work for a short while, but by the end of the day I always turn to soup. There are so many varieties to choose from; it can be hard to pick. The most recent edition of Cook’s Illustrated put out an entire issue filled with soups and stews, giving me much to choose from. I have chosen to test out the Carrot Soup. It is filled with puréed vegetables, ginger, and curry. All of which I find extremely appetizing when I am battling a cold.

While I don’t feel it is my place to share this recipe, I will share that the latest issue is worth picking up and playing around with. Here’s to warmer weather and more productive days!

    Stay warm, make soup, drink hot Cranberry Cider (maybe with a little rum.) Then sleep. Get better and get warm. Thanks for the ideas. I’m going home to make soup.
