Clean Eating Wheat Thin Recipe

I have a guilty pleasure. Actually, I have a few: caffeine, wine, chocolate, you know, the usual. But I have one that I really, really try to avoid.

Chips! Snacking on crunchy, bite-sized bits covered in salt. Seriously, there is something addicting about them. Maybe it’s the salt, maybe it’s the bite-sized portions, but whatever the reason, snacking [especially on chips] is!

I am always looking for a solution to my snack cravings, and I have finally found one that both my husband and I love!

May I present… the Clean Eating Wheat Thin. Crunchy, salty, bite-sized, and delicious!

Made with all whole-wheat flour, these little guys are tasty, easy to make, and based on my estimation, only packing about 105 calories for 10 squares! I dare you to give these a try. What are your snacking pit falls? I might have a healthier recipe for it…

  • 1¼ cups whole-wheat flour
  • ½ t. fine sea salt
  • ¼ t. smoked paprika
  • 4 T. cold butter
  • ⅓ cup water
  • 1½ T. honey
  • ¼ t. vanilla
  1. Preheat oven to 400 degrees and line baking sheets with parchment paper.
  2. Combine dry ingredients in a medium mixing bowl.
  3. Cut in the butter using a pastry blender or two knives.
  4. Make an impression in the flour mixture and add all of the wet ingredients.
  5. Mix until well blended using a wooden spoon and then your hand to combine.
  6. Remove the dough onto a floured surface. Break into two equal portions and shape each into a ball. Allow dough to rest 15 minutes.
  7. Roll each portion out to a rectangle and cut into equally sized portions.
  8. Place on baking sheets, sprinkle with coarsely ground salt, and bake 7- 10 minutes depending on thickness.
  9. Snack away!
If you wish to make flavored wheat thins, add herbs (such as rosemary, thyme, or garlic) to the flour mixture.

These were tasty, but they came out a little chewy vs cripy. What did I do wrong??

Sorry for the delayed response!!! I would guess there was too much moisture or not enough cook time. If the crackers didn’t come out too brown, I would simply try increasing the amount of time they were in the oven. If they still do not come out crispy, you could try reducing the amount of water used slightly. I live in an extremely dry climate so this could very easily be the cause of the problem.
