Every Monday, I have been sharing a meatless Monday meal. I enjoy these posts because they require me to get creative in the kitchen. Unfortunately, my current schedule prevents me from such creativity. Because of this, meatless Mondays will be temporarily postponed.
Despite our new schedules, we continue our sustainable living efforts. Postponing meatless Mondays doesn’t mean I am taking a blogging break, but rather, I will be sharing more of what we are doing around the house.
There continues to be much to share; however, it comes to me in a different way. Rather than surfing the web for new ideas, I find myself searching the cabinet and refrigerator.
…Which is exactly how I came to this tasty smoothie. As I searched my pantry for something to meet my smoothie craving, I discovered there was no milk, ice, or other smoothie related options.
I found myself using the purest and rawest of ingredients. Which created this thick, nutrient breakfast smoothie to satisfy kids and adults alike.
- 1 frozen banana, peeled and cut into chunks
- 5 strawberries, cleaned and hulled
- 2 T. plain yogurt
- 1 t. honey
- Place the first two ingredients into a blender. Pulse until the banana is broken down.
- Add the yogurt to the blender mix. Combine on the lowest speed.
- Drizzle the honey into the mixture and blend until completely combined.
The banana in this recipe keep the smoothie thick and cool without resorting to ice, which can melt.
Problems peeling your frozen banana?
Run the banana under hot water and peel using a butter knife.
