Heirloom Tomato Salad

Fall has arrived. Unfortunately, I’m learning that life in the desert means you don’t feel fall the same way.

There are no trees to change color, the crisp fall mornings continue to turn uncomfortably hot by mid-day, and the chance for an early snow fall is most certainly out of the question.

But it’s not all bad.

A longer summer means a longer tomato season. Here in early October, my tomato plants are going strong and we continue to enjoy one of my favorite summer salads well into the fall months.

Heirloom Tomato Salad
Recipe type: Side Dish

  • 1 pint heirloom grape tomatoes, halved
  • 2 T. olive oil
  • 1 T. balsamic vinegar
  • Sea Salt
  • Crumbled Feta Cheese
  1. Crumbled Feta Cheese
  2. Toss the first three ingredients together to create an even coat.
  3. Lightly sprinkle with salt. Toss to coat.
  4. Sprinkle with feta.
  5. Enjoy alongside your favorite main course.
