Healthy Banana French Toast

Ingredients
  • Slightly stale sourdough baguette, sliced (I used about ½ a loaf)
  • 2 eggs
  • 1 T. milk
  • ½ t. almond extract
  • 1 pat butter
  • 3 T. walnuts, chopped
  • 1 banana, sliced
  • Maple syrup
Instructions
  1. Whisk the eggs, milk, and extract together.
  2. Melt the butter in a skillet over medium heat.
  3. Dip the pieces of bread into the egg mixture and cook in the skillet on one side until brown.
  4. Flip the bread pieces until the second side browns.
  5. Top the French bread pieces with ½ of a sliced banana and ½ of the walnuts.
  6. Serve warm and drizzle with maple syrup.
